Yum! My go to at the moment is to chop up a potato (and/or sweet potato) into small cubes and fry in garlic and oil, add in some chopped greens (whatever is in season) I love asparagus, zucchini and broccolini, add to potatoes and stir til cooked, add a decent drizzle of balsamic glaze, mix through pine nuts and top with cheese - either feta or parmesan. Deeeee-lish!
