What are you having for dinner tonight? (Gwyneth is probably having tacos)

We haven’t done one of these posts for quite some time, mostly because I’m always too ashamed to tell you what I’m having for dinner which is usually I-Have-No-Idea.

But I know there are many of you who are far more organised than me. Like Gwyneth Paltrow, who recently posted this clip of herself cooking her favourite Mexican taco meal for her family. When I first sent this clip to MM site manager Lana and told her I loved it (I love watching other people cook but it seems to have no correlation with me doing it myself), she wondered why Gwyneth was wearing sequins.

You can cook it too.  And you can wear a t-shirt or an apron even.

Baja Style Shrimp Tacos

A southern California classic, grilled shrimp tacos couldn’t be quicker to prepare—and they happen to be very healthy at that. The combination of fresh lime juice and Cholula hot sauce is pretty much unparalleled.

SERVES: 4
TIME: 10 minutes

  • 2 pounds medium shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • the juice of one lime
  • 1 teaspoon coarse salt
  • 1 dozen corn tortillas
  • pico de gallo (see recipe below)
  • lime wedges for serving
  • Cholula hot sauce (or your favorite hot sauce)
  • crumbled cotija or feta cheese (optional)

Preheat your grill over high heat. Toss the shrimp together with the olive oil, lime juice and salt. Grill until cooked through, about 2 minutes a side.

To serve, heat the tortillas in a dry frying pan and wrap them in a tea towel to keep warm. Pile a few shrimp on top of each tortilla and serve with a bit of pico de gallo, fresh lime juice, a few dashes of hot sauce and a little of the crumbled cheese if you’d like.

Last night I made a basic vegetarian fried rice, a gingery soup with oyster-mushrooms, carrot, nori, and tofu, and bbq/five-spiced panfried tofu. Was really tasty!

Super-cold today so probably going for a US-style Thanksgiving type dinner. Roasted drumsticks, stuffing, veggies, and pumpkin pie...yum!

Gwyneth's taco recipe is pretty much what I make, most of the time. We had bean & rice tacos a few nights ago with pico de gallo, etc.

I did a stew thingy in the slow cooker last night. First time I've ever gone commando with the slow cooker! Loaded it up with osso bucco, heaps of veggies, beef stock, curry paste, spices. Turned out all right! We'll probably have enough for the next couple more nights.
