5 family-friendly dinners: Meals that make amazing leftovers.

 

 

 

There was a time when I hated taking leftovers for work lunches.

Now? They’re my best friend. Did anyone say time-poor?

Monday: Spaghetti Carbonara

Love an Asian salad, and because it’s tuna it’s cheap and easy if you haven’t had time to go for fresh ingredients.

Yummmm. Roast beef sandwiches with mustard or horseradish. Almost as great as the original roast dinner.

When I was single and share-housing I used to plan my meals to provide for several dinners and lunches. Easy, healthy options that also freeze well include: any kind of soup or casserole, stir fries and curries, bolognaise sauce that you can use with pasta, baked potatoes etc, American style chilli ( as is or use in Mexican etc), marinated and bbq'd chicken breast, for salads, sandwiches or with veggies...., so many options!
