A good roast can make the dullest day special. Add Italian flavours to this dish and you’ll be in heaven.

I’ve been lucky enough to be feasting on Italian roasts my whole life thanks to my mum’s exceptional cooking skills. Like all good Italian children I have eaten roasted rabbit, roasted quails and at one stage, my roasted pet chook Clucky. Nice one mum.

But back to less upsetting cuts of meat…

Monday: Italian Roast Scotch Fillet

I’ve never taste a more tender, more flavoursome roast than this. My mum says the wine tenderises the meat as well as adds flavour. And you can sip it while you cook perfect.

Roast chicken is a classic. Roast chicken Italian-style is out of this world. The kids will be fighting over this delicious dish and the fresh rosemary makes it truly special.
