This cheap, pantry dinner totally makes it feel as though you tried, even though you didn't (and that is totally okay).

With just a few pantry staples and zero effort, this pearl couscous recipe is the weeknight dinner shortcut you'll keep coming back to.

One Pot Pearl Couscous.

Ingredients:

1 cup pearl couscous

2-3 tbsp oil

1 onion, grated or finely diced. (Hot tip: Grating the onion = no chopping + it basically melts into the sauce so the kid's won't know it's there).

2 cups water or stock

Salt & pepper

Frozen peas

Method:

Heat oil in a pan and cook the onion until soft.

Add pearl couscous and toast for 1–2 minutes.

Pour in water or stock, season with salt and pepper.

Simmer until all the liquid is absorbed and the couscous is tender.

Stir through frozen peas at the end.

Done!
