
A weeknight lifesaver when you need dinner on the table fast (and with minimal clean-up).
Everything cooks in one pot, the veggies disappear into the sauce and it's easy to adapt based on what you've got in the fridge (or what your kids will actually eat!).
One-Pot Creamy Ravioli Dinner.
Serves: 4–6
Prep time: 10 minutes
Cook time: 15–20 minutes

Ingredients:
1 bag of pre-made ravioli
1 onion, grated
1 zucchini, grated (you can also add any other grated veggies your kids like)
Oil, for frying
Salt and pepper
½ jar of passata
A few spoonfuls of cottage cheese (you can also use cream cheese, Greek yoghurt, mascarpone — anything that will make the sauce creamy!)
Shredded cheese, for topping
Method:
Heat a drizzle of oil in a large pan over medium heat.
Add the grated onion and grated vegetables and cook until soft and fragrant.
Stir in the passata, salt and pepper.
Add the ravioli and gently stir to coat in the sauce.
Pour in enough water to just cover the ravioli. Cover the pan and simmer on low until the pasta is cooked through.
Stir through your chosen creamy option.
Sprinkle with shredded cheese and serve immediately.
