Food blogger Phoodie, shares her incredible crepe layer cake recipe – it's not as hard as it looks!
crepe1
This layered crepe, fudge and Ferrero Rocher creation looks like it would be difficult to make, but I can assure you it most certainly is not. Time consuming, yes, but hard? No.
crepe2
To make the ganache, place 400g good quality dark chocolate into a pan with 250ml of single cream and slowly melt over a low heat, stir constantly. Once melted and combined turn off the heat.
crepe3
Place the Ferrero Rocher chocolates (if you're making 48 layers you'll need a large box) into a food processor and blitz to make the crumb - you still want to retain some level of crunch, so don't go
crepe4
You're now ready to start assembling the cake, Step 1: Spread a thin layer of the ganache over one crepe.
crepe5
Step 2: Sprinkle a layer of the Ferrero Rocher crumb over the ganache.
crepe6
Step 3: Repeat till you use your last remaining crepe.

Serve with espresso creme (simply whip cream and add slowly a shot of espresso).
