This is the kind of dish I'd happily pay $30 to have delivered for lunch every day.

Only problem being? I'm a tight arse and don't want to spend that kind of money.

Luckily, you can make this delicious Vietnamese-inspired pork rice bowl at home for peanuts! (Oh, and you can add peanuts too).

Pork Candy Rice Bowl

Serves:

Prep time: 15 mins

Cook time: 20 mins

Ingredients:

1 cup jasmine rice

6 pre-made frozen spring rolls

1 lime, halved

For the salad:

1 cup shredded lettuce or cabbage

1 long red chilli (deseeded if you prefer)

½ cup sliced cucumber

1 carrot, shredded or julienned

Handful of cherry tomatoes, halved

½ cup fresh herbs like basil, coriander and mint

For the Pork Candy:

500 g pork mince

½ onion

1 clove garlic, crushed

1 tsp crushed ginger (fresh or jarred)

1 heaped tbsp brown sugar

1 tbsp fish sauce

1 tsp soy sauce

1 tsp sesame oil

Method:

Cook rice using your preferred method. I steam my rice.

Chuck your spring rolls in the airfryer or oven and cook as per the packet instructions.

To prepare the salad, add all the ingredients in a bowl, mix and set aside.

For the pork candy, fry the onion, garlic and ginger in oil for a few minutes, add the remaining ingredients and fry on a high heat until the pork is cooked, and the sauce is thick and sticky.

To plate, layer the pork candy over rice, add a hefty amount of salad, spring rolls and half a lime for squeezing.
