Behold: a quick way to turn leftover broccoli stems into something your kids will actually eat (and not pick out of the meal).

You can whip these up quickly and stick them in the school lunchbox too!

Cheesy Broccoli Fritters.

Makes: 8–10 fritters Prep time: 10 minutes Cook time: 10–12 minutes

Ingredients:

1 broccoli stem, grated

1 onion, finely diced or grated

2 handfuls of shredded cheese

Salt and pepper, to taste

1 tsp minced garlic

2-3 Weetbix, crushed

2 eggs

A dash of milk (just enough to bring the mixture together)

Oil, for frying

Method:

Grate the broccoli stem and place it in a mixing bowl.

Add the onion, cheese, salt, pepper, and garlic.

Mix in the crushed Weetbix, eggs, and a splash of milk. Stir until everything combines into a batter. Add a little more milk if it feels too dry, or more crushed Weetbix if it's too wet.

Heat oil in a pan.

Scoop spoonfuls of the mixture into the hot pan, flattening them slightly.

Fry for a few minutes on each side, until crispy and golden.
