Open Post: "I'm learning to cook, but so far I've only nailed one meal..."

 

Caitlin can’t cook and she needs your help.

Hi friends and welcome to this week’s Open Post.

If you’re a new visitor to Mamamia, Open Post is our little safe haven on the Internet where we chat about our weeks. Absolutely nothing is off limits.

Which is why I want to talk about cooking.

You see, I’m a really shitty cook. I guess I could blame myself for that, but I choose to blame my wonderful mother. Because every night, when she made a delicious meal and I refused to eat it, she refused to force-feed me.

Here I am, at a restaurant. Not cooking.

This is basically how it would go down:

Me: Sausages? Again? I don’t want that.

Her: Caitlin, I couldn’t care less if you don’t eat this. Go get yourself some Weet Bix instead.

Me: Done.

Now that I’m older and (slightly) wiser, I should be cooking for myself. But I just can’t do it. I eat nachos and instant noodles at least four times a week, and the other three nights are take out.

But there is one meal I have conquered, and I’m pretty proud of myself for it.

Chicken. Pesto. Pasta.

Here’s what you do:

1. Boil pasta (I use penne)
2. Chop up chicken breast into small pieces, throw in fry pan.
3. Add semi-dried tomatoes, garlic and a lot of pesto.
4. Once the pasta has boiled, add pasta to fry pan with chicken and other cooked ingredients.
5. Add cream.
6. Add MORE pesto.
7. Serve with a lot of parmesan cheese.

Easy. Delicious. Better than yet another cup of instant noodles, too…
