“If it ain’t broke don’t fix it”…..Yes or no?!
Whenever I cook I feel the need to throw myself into the pan. Figuratively speaking, of course. Whether I’m meant to be strictly following a recipe or attempting to simply copy something I’ve watched my grandmother make for 3000 years, I feel the need to make my version original.
Sometimes that means cooking whatever it is for a longer / shorter amount of time, sometimes it means leaving out selected ingredients and sometimes it means adding in loads of things that have never been used before in that particular dish.
Originality is good. But is it better? Where does my desire to be creative come from? Am I simply seeing if I can improve on the old classic or am I being arrogant and wanting my version to be the best? The one everyone loves the most. The one that people will remember.
Whatever the case, over the years with regards to recipes, I have learnt that the answer to the question “Is the original version the best?” isn’t purely “Yes” or “No”. The answer is actually “Sometimes”. Sometimes the original is better and sometimes the variations are better. However, to further confuse matters, often, people will disagree about what is better and what is not. Our tastebuds all have different opinions!
To get the conversation going, I’ve cooked Rocky Road 3 ways (Original, White Chocolate Cookies and Cream and Mint Chunk.) I want you to have a look at the pictures, imagine the flavour combinations in your head and tell me which one you think is the best!? And why! I know what I think…..
RECIPE 1: Phoodie’s ‘Original’ Rocky Road (See gallery for step by step pictures)
Ingredients (makes approx. 30 pieces)
2 cups mini white and pink marshmallows
350 grams roasted, unsalted peanuts
1 cup desiccated coconut
400 grams dark chocolate
Method
1) Place the marshmallows in a large bowl.
2) Crush the peanuts using a rolling pin. Roll by applying pressure to the heel of your hand. Don’t be crazy, “kinda crushed” is fine. They will all be different sizes. Breathe. That’s ok. Add these to the marshmallows.
3) Scatter the coconut evenly on a baking paper lined tray. Place in oven at 180 deg. cel. for approx 1 minute. DO NOT TAKE YOUR EYES OFF THIS or it will definitely burn. You want the coconut to turn a light golden brown colour. Once done, add this to marshmallows and peanuts.
4) Melt your chocolate on the stove over a medium heat, stirring the entire time so that chocolate does not burn or stick to the base of the pan. Once thick, glossy and completely melted, pour over marshmallows, nuts and coconut and quickly mix everything together.
5) Transfer this mixture to your pre-prepared baking paper lined dish. Place dish in fridge to set.
6) Look at your feet and count the spots on your shoes, and by the time you’ve done this, the rocky road will have set. If you do not have spots on your shoes, look at the picture of my shoes, and count the spots on those. It is definitely preferable to leave the rocky road in the fridge for at least an hour as the more set it is, the easier it is to cut, but if you are in a hurry, it honestly does set in minus one second.
7) Remove from fridge and cut into slabs and then into pieces. ENJOY!

Love this post phoodie. Would be great to have this as a regular Friday feature as I love cooking and actually have the time to do some baking over the weekend. I’d go for the original recipe, but maybe add another couple of ingredients. But I’m also a vanilla thick shake and plain crepe kinda girl.

I make my rocky road with snakes cut up into little pieces and instead of nuts I use maltesers for the crunch. I have also used turkish delight (the choc covered one) instead of snakes for an adult version as gifts at Christmas time, it is very well received if I do say so myself.

WOW! My mouth is certainly watering now. I am a huge fan of rocky road, and i couldn’t say no to any of your 3 versions. I think my favourite would be the mint chunk – anything with mint slices and peppermint crisps is amazing!
I’ve only made rocky road once myself, but I didn’t use very high quality chocolate and you could tell! Will have to give it another try, thinking i might make a mint chunk/white chocolate combo.
I often change recipes around to suit fussy eaters or to add in something that I think will improve the recipe. Sometimes I am right, sometimes I am way off the mark. I used to follow recipes VERY rigidly and I am only just starting to get the confidence to experiment a little.

I would love to offer a food suggestion for a future post. I am likely leaving home for the first time in a few months, but am worried I will starve as my cooking skills leave a lot to be desired. My favourite recipe for rocky road is one that mum’s friend from work makes… She uses milk chocolate, good quality marshmallows (the mini ones tend to taste too plastic for my liking), coconut and raspberry jelly lollies. Actually, I think I’ll make a batch soon- it’s probably better than doing my uni assignments!

My FAV rocky road is Cadbury milk chocolate + unsalted peanuts + quartered marshmallows (black&gold brand) + halved lolly raspberries (also black&gold brand), I eat it until it’s all gone

I make two varieties of rocky road that I’m actually pretty famous for (what? You haven’t heard of me? Bummer).
First one – 2 blocks milk choc, 1 block dark choc, 1 bag big marshmallows (cut in half), slivered almonds, shortbread biscuits (cut into random chunks), handful of shredded coconut and glace cherries. Mix and set!
Second one – 3 blocks white choc, macadamias, 1 bag big marshmallows (cut in half), cranberries and coconut. Mix and set!
Final step for both: eat!
Will definitely be trying your cookies and cream recipe Phoodie. Also, I want to make up a salted caramel and peanut rocky road!

Another yummy suggestion- and this is my favourite version of rocky road (created when I was heartbroken and hungover!) is a mix of white chocolate, roughly chopped almonds, white marshmallows and chopped plump dried apricots. Yum!

I love making rocky road. My advice is, instead of pouring the chocolate over the marshmallows etc, add the ingredients to the hot saucepan. This way the chocolate doesn’t go cold so quickly and is much easier to work with

Would def work to add ingredients to pot, as well as the other way around – only thing I’d say is not to add to HOT saucepan, because if too hot then marshmallows melt IMMEDIATELY, and the whole thing about RR is seeing those gorgeous MM’s when you slice it up!

Salted Caramel Butter Fudge (Duce De Leche, Butter, Sugar, Nutmeg)
Coconut Cream Jellies (Palm Sugar, Gellatin Leaves Coconut Cream)
Flourless Mudcake (Almond Meal, Butter, Oreos, Cocoa, Coverture, Vanilla Bean Extract)
So far, everybody likes my AJ’s Rocky Road.

I had been looking for a dense chocolate cake for a long time. I am not a massive fan of fluffy, light chocolate cake.
