It’s a burger. No, it’s a cupcake. Yes, it really is. Lana made these recently at home and had the MM office enthralled when she showed us photos of it on her phone. It then sparked a conversation about impressive things we’d cooked or eaten. Lana writes:
“Cupcakes are one of my very favourite food groups. I know that technically they don’t fall into the food group category but I am quite sure that is just a technicality overlooked by the dietitians and nutritionists that draw up the food pyramid. I can’t deny that I absolutely love eating cupcakes but to me the greatest joy has to come from the icing, and it’s not just eating the icing but also playing with it. Creating something pretty with it. It is like combining baking and drawing – all my childhood fantasies played out as an adult in my very own kitchen.
Even though I am not eating sugar at the moment I decided to give the cupcake thing a whirl this weekend for my son and some of his friends that had come to play – I often bribe his friends with sugary treats, I am evil like that (it has made my house the go-to place for all his mates and I LOVE that) . Given that I wasn’t eating sugar and I don’t eat meat I decided to go all out and create the ultimate no-go food for myself. Sugar meat, otherwise known as hamburger cupcakes.
Really it was as easy as anything you could imagine but best of all it was one of those recipes that you can picture in your head and they actually turn out the way you had envisaged. It’s very hard to get wrong.
First you make vanilla cupcakes (out of a box is easiest), then you make brownies (out of a box as well)
Slice the cooled cupcakes in half to make two sides of the hamburger bun
Cut the brownies up into “patty” sized pieces.
Mix together coconut and green food colouring to make “lettuce”
Add yellow food colouring to icing to make mustard and red food colouring to make tomato sauce
I used little egg lollies from the confectionery aisle of the supermarket for eggs.
Let the kids make their own burgers
(For my icing I just mixed plain white icing sugar with a little melted butter and a raw egg white – my favourite icing in all the world)
I didn’t eat one! Although I nearly bit my husband’s head off such was my temptation to indulge…but the kids loved them and so did my husband. There weren’t even any left to bring to the office. Sorry guys

Lana! I made one of the glucose cakes in the back of David Gillesies books last week (the vanilla cake) and it was yum – even for the people in my family who still eat sugar!!! I even used wholemeal flour (thought I might be pushing it with that one) and it was fine. I didn’t use his icing though (didn’t have any gelatine powder) but I adapted a regular butter icing by replacing the sugar with dextrose, and added some cinnamon. Even my 6yo loved it!! Anyhoo, you’re obviously much more talented in this area than I, without doubt, so I’m sure you could do fabo things with glucose cakes. Love the burger cake!

I bought a new sandwich press and it is the best thing since sliced bread. I made inverted pizzas, or calzones as I was informed today, using souvlaki bread, pizza sauce, salami, ham, cheese, tomato, onion and a bit of avocado. Simple, quick, nutritious and oh so yummy and a heck of a lot cheaper than the take away variety

I made Spanakopita (spinach and feta pie) on Thurs. I bypassed all the newer fancy gourmet recipes and went hunting for the most authentic homemade recipe I could find. DELICIOUS. Also this week I took homemade caramelised popcorn (with crushed pecans) with me to the movies. My boyfriend made me swear I never made it more than once a month.

It was yummo … BUT be careful, I burnt a little bit of skin pouring the hot caramel over the popcorn. It does splash back. Also, I popped the popcorn in good olive oil rather than vege oil. I find vege oil makes it pop too dry. Finally, don’t pour all the caramel over the popcorn, I actually stirred down as much as it took to coat everything lightly, didn’t want it too sweet. Because I’m feeling a little bit show-offy, Saturday night I made home made pasta with home made basil pesto (from the freezer). The the most divine (and dead simple) chocolate fondant for dessert. The table was silent during dessert, no small feat for 6 girls who were already three bottles of champagne into the night!

I converted a few people by doing a salad with deep fried cubes of tofu put straight into a dressing when still hot. I also love the deep fried puffy tofu in laksas! I even got my dad to like it!!

Yum! I cut the tofu into cubes and fry with a little oil, garlic and chilli….then take the tofu off the heat, do the rest of the meal then re-heat it for the last minute so it’s not overcooked.
If you overcook it it can be rubbery and awful and I think that might be the mistake people make and why they don’t like it.

I actually find tofu and bean curd (and even many soy milks) have a really bad after-taste. I wonder if it’s a bit like coriander? Some people find that has a really soapy flavour yet I don’t taste it.

Actually no, if it’s the ground up coriander seed I think it’s really lovely as it’s mild and so different to the leaf. It’s really just the fresh leaf either through something or as a garnish.
It’s like the princess and the pea for me, if there’s one piece of it in a meal it can ruin the whole thing and I literally can’t eat it.
It’s such a very strong aversion that it almost goes past hate. It’s a bit odd really but I know of quite a few others who are similar to me.

I agree about the coriander. I always ask if coriander is in the dish and ask for it to be left out. Do get the occasional startled look from the waiters when in Thai restaurants.
I don’t know if that because they couldn’t imagine the dish without coriander or if they are frightened as to what the chef’s reaction will be when the order hits the kitchen.

Best thing I’ve eaten lately was Korean BBQ last night. I’ve only ever eaten kim chee and bulgogi beef before, so it was great to try some other Korean food, and sooooo yummy.

I just made san choy bow for lunch which was pretty awesome, but as far as food that looks great I will have to go along the childrens birthday cake line like so many others. Very easy really. Once I’d made the butter cake, I evenly separated the batter into seven bowls. My daughters and I then had fun adding a different colour to each bowl. Then I gently placed each colour on top of one another (no mixing!) in the cake pan and voila, in the oven it goes! Good luck!

My hubbie and I both so busy at the moment that cooking has fallen by the wayside in a big way at our place. I made this recipe for a dinner party last weekend: two layers (one cake sliced in half) with a cream-cheese frosting (250g cream cheese, 2 cups icing sugar, 1 tsp vanilla, 4 Tbsp butter) in the middle and on top, dusted with coconut. SOO easy and impressive!

Oh my, these made me laugh so much.
Had an overwhelming urge to pretend I was lying by a beach in Thailand this week, so busted out some coconut and lime tapioca with lychees (just cooked the tapioca in coconut milk that had some strips of lime zest and ginger pottering about in it). Then just had it with tinned lychees that were hiding in the cupboard and some toasted coconut shards. Ate it watching some truly terrible television. It was like rice pudding on vacation.

Jamie Oliver’s Simple Baked Lasagne.
Ignore the ‘simple’ bit … there’s a few steps and you need to get going about 4 hours before you want to eat it … BUT it’s totally worth it. It’s the most amazing lasagne in the universe and it never fails to impress.
I make it every time I’m off to a ‘bring a dish’ affair because I’m competitive. I win every time.

Gingerbread Biscuits
(Makes 24)
125g butter
1/2 cup brown sugar
1 egg yolk
2 1/2 cups plain flour
1 tspn bi-carb soda
3 tspn ground ginger
1/2 cup golden syrup
Preheat oven to 180 degrees and line two baking trays with baking paper.
In a mixer, cream together the butter and brown sugar until light and creamy. Add the egg yolk and beat until combined.
Sift the dry ingredients into the bowl and stir into the butter mixture with the golden syrup. Mix to a light dough.
Knead the dough very lightly (and very briefly) then roll out until 3mm thick. Cut biscuits from the dough and place onto the prepared trays.
Bake for 10-12 minutes or until the biscuits have turned golden. Transfer to a wire rack to cool.
For a basic icing, beat 1 egg white until it begins to froth. Add 1 1/2 cups of sifted icing sugar and 1 tspn lemon juice. Colour the icing with a bright food dye then smear onto the cooled biscuits.

I had a lovely evening with my twin 4yr old boys on Tues night, when we made pizzas together.
Woolies bought bases, Baazar – thin and yummy
tomato paste, cheese, ham and pineapple – I let the boys do it all. and we had a blast.
Thinking of a quote I read on MM this week “parent like you are a grandparent”, I let the boys smear the sauce on the base, and all over the bench and themselves, spread the grated cheese all over the floor, add the ham, in completely uneaven blots, and eat most of the pineapple before it went on the pizza.

The best dinner I made this week was my bean casserole – I know sounds boring but it is so easy and can be tweaked in so many ways.
The basic recipe is :cook an onion and a couple of cloves of garlic in olive oil, add 2 tins of beans (any sort but I usually use one of red kidney and one of 4 bean mix), a tin of tomotoes, a tin of stock or water (ie use an open tin to measure the stock or water) and then some cumin – about 2 teaspoons.
I cook this until it has reduced to the right consistency.
If I use beef stock I add in some sweek paprika. If I add chicken or veg stock or water, I add some fresh coriander and a spoonful of yoghurt or sour cream when I serve it up.
You could also add in some mince, bacon or fresh veg like capsimum and carrots.
You can serve it on toast, rice, potato, tortillas. Or with a salad, like an avocado salsa with lots of fresh herbs and lemon/lime juice.
The leftovers are then ‘whole nother story’ – you can add another tin of tomotoes and some basil and make a pasta sauce. You can use it in a lasagne. Burritos, tacos, stir through rice with some lettuce, tomotoes, capsicum and feta for a salad or it can be frozen for later.
It so simple, cheap and versatile I make a batch at least twice a month. For the basic recipe everything can be in the pantry all the time.

Best thing I cooked this week was chicken and leek pies. Winter comfort food for a wintery day in Melbourne. Dead easy and great for lots of people (I was feeding 6). Brown chicken and leek. Meanwhile boil up potato, carrot and corn. Mix some flour into chicken mixture and add some white wine, stock and cream. Mix in the cooked vegies and there is your filling. Spoon portions into puff pastry and wrap up. Cook til golden. Mmmm…even one left over for my lunch today.

I made a Swiss Apple Pie earlier this week to post on my website. Normally it would be eaten by the kids during the next evening meal, but on this day I was all on my own with the kids having an evening meal with their Dad.

On Sunday I had a “baking day”, a day where all I do is bake. It makes me feel good about myself that I can cook all this delish stuff, from scratch, & put it in my boys ( & hubby’s ) lunchbox & everyone thinks I’m a bloody genius lol. It’s kinda like love wrapped in plastic, or tuppaware!
So I make these cookies called ” chunky monkies”, they literally have two blocks of chocolate mixed in ( one dairy milk & the other cookies & cream). The best thing is they also have oatmeal in them so yu can pretend they are healthy, sometimes you can even pretend they are breakfast! ( for me not chidren of course). This time though I had forgotten the blocks of chocolate so used choc chips, substitued some of the flour for cocoa & WAAALAAAH, brand new sort of cookie was born. Sooooooooo fricken yum, edges a little crunchy but centres all chewy & soft. I want to make them again cause we ate the whole batch by Thursday but know if I make them then my hips are gonna hate me, but my family will love me for it & I think that make sit all worth it

Most exciting? went to dinner at Atelier last weekend. Now that was food to die for. Caramelised pear souffle anyone?
Cooking this week, not exciting, but yummy and dead easy:
in lasagna dish
bottom layer –one packet brown smart rice microwaved and spread out
middle layer — one supermarket package of chicken mincebrowned then simmered for a couple of minutes with a jar of enchilada sauce (or whatever flavour you fancy)spread over rice
top layer — cheese sauce, the cheat’s version, 1 large container of light ricotta in saucepan, stir in a little flour (just to stabilise) add some milk till you like the consistency, then add grated cheese. stir till the grated cheese melts in then pour over mince
top with dried breadcrumbs and more cheese if liked, heat through in oven (20 minutes should do)
